Gnobby Gnome Maple Syrup is a unique small-batch maple syrup from New York, handcrafted on our 40-acre property at the base of the Catskill Mountains, deep within what we’ve come to call GnomeWood Forest.

What makes it different starts in the woods. Our syrup comes from a mixed grove of trees, giving it a character all its own. The result is a one-of-a-kind flavor with notes of vanilla, butterscotch, and marshmallow.  It is rich, smooth, and unlike ordinary maple syrup.

We make fewer than 200 bottles each year, and every step is done by hand (from collection to processing to bottling) in our sugar shack, hand-built from reclaimed wood from an old dairy barn in upstate New York.

Our process is just as distinctive as the flavor.

We begin by removing much of the water from the sap with reverse osmosis, then boil it partway into a rich concentrate and begin the caramelization. At that stage, minerals naturally begin to separate out as niter, also known as sugar sand.

Next, we cold-crash the concentrate for a week or more below 40 degrees F, a technique borrowed from cider making and small-batch fermentation. This allows the niter to settle slowly and gently by gravity so it can be removed before the final boil.

Then we decant the clarified concentrate back into the boiler and fire finish it. With most of the niter removed, the syrup boils more evenly, allowing deeper caramelization and the development of clean, nuanced, exceptionally smooth flavor.

This is not mass-produced syrup. It is a carefully refined, premium maple syrup made in very small batches by people who are willing to do extra work for better flavor.

What does “Cold Crashed and Fire Finished” mean?

  • After concentrating the sap, we refrigerate it for a week or more before the final boil. This step, borrowed from our cider-making days, is called cold crashing. It gives niter, also known as sugar sand, time to settle naturally using gravity. We then carefully decant the concentrate and return it to the fire for the final finishing boil. This extra step helps remove sediment gently and allows the final caramelization to develop with a cleaner, smoother flavor.

Why do you cold crash the syrup?

  • Cold crashing is our way of using time and gravity as part of the refining process. Instead of relying only on filtration during the final stages, we allow niter to settle out naturally before the last boil. This helps reduce sediment in the finished syrup and is one of the unique steps that sets Gnobby Gnome Maple Syrup apart.

What is niter?

  • Niter, sometimes called sugar sand, is a natural mineral sediment that forms during maple syrup production. It comes from minerals in the sap, such as calcium and other naturally occurring compounds. It is completely natural, tasteless, and harmless.

Why are there small crystals at the bottom of my bottle?

  • You may occasionally notice a few tiny crystals or sediment stuck to the bottom of the glass. This is usually a small amount of leftover niter. It is natural, tasteless, and harmless. Because sap chemistry changes from year to year based on weather and climate, some seasons produce more niter than others.

Does the flavor change from year to year?

  • Yes, a little. Maple syrup is an agricultural product, and each season is shaped by the weather, the sap, and the trees themselves. That means each batch can have slight natural variation. Even so, Gnobby Gnome Maple Syrup is known for its rich, smooth flavor and its signature notes of vanilla, butterscotch, and marshmallow.

What maple syrup grade is this?

  • Maple syrup sold commercially is classified into four grades based on color. These grades are required for sale and range from lighter to darker syrups. Our syrup typically falls between Amber and Dark in most years. No matter where a batch lands in that range, it still carries the same distinctive Gnobby Gnome flavor profile. Use the "Flavor Profile" variation to select a grade. Honestly, you can't go wrong with any of them.

Does darker syrup mean better syrup?

  • Not necessarily. Maple syrup grades describe color, not quality. Lighter syrups are often more delicate, while darker syrups tend to have a fuller, deeper maple character. We focus on producing a syrup with exceptional balance, smoothness, and flavor, not chasing a single shade.

Is everything really done by hand?

How should I store my syrup?

For best quality, store unopened syrup in a cool, dark place. After opening, refrigerate it.
